Friday's salad

A food post...it's been a while. I read somewhere that nobody wants to know what you had for dinner, but I remain  unconvinced. Karin always has the most scrumptious food posts, so does Angry Chicken. Anyway, the sight of my lunch made me happy today, so I am sharing, sorry if it's a terrible bore.

You are looking at a mix of greens, edamames, pine nuts, gruyere cheese and croutons flavored with olive oil and garlic. I made the croutons this week, a day when we had nothing but lettuce and dry bread to eat. I cut the bread in smallish pieces, mix it with olive oil and chopped garlic cloves and put it to crisp under the broiler. I always have pine nuts in the freezer because they make everything special ( even frozen pizza). The croutons keep well in the fridge and I am debating freezing some for even more desperate times. I hate to go shop for groceries, can you tell?

The salad looks and sounds delicious! Homemade croutons are so good. I must remember to add edamame the next time I have a salad. I always eat the edamame by itself - boring.

Hmmm... pine nuts stored in freezer... Good Idea! It's amazing how 'something made from nothing' tastes extra good, isn't it? Maybe it's the clever resourcefulness that makes it extra good. I discovered hot pasta with a dab of butter and fresh cracked pepper that way. Just think... hot pasta with a dab of butter, fresh cracked pepper, and a handful of pine nuts. Even better - a little parmegiano too!

It looks delicious! It's almost midnight and now I have a craving for a salad. I don't mind grocery shopping but I hate carrying in all the food then putting it away.

I agree with you, I don't mind the sharing of the food. In fact I've gotten some pretty delicious recipes that way. Your salad looks yummy! I love edamame, pinenuts and homemade croutons.
